Euryhaline fish (marine and freshwater), that lives the major part of his life in sea but enters rivers for reproduction, skeleton only partially ossified. Long body. Head armored by bony plates. Tubular mouth, without teeth. Small eyes. Scales replaced by granulations. Brownish or greenish grey on dorsum. Very appreciated for its eggs which are used to make caviar.
